In The Vineyard: Winter Dormancy
An update from Director of Winemaking, Nick Moraida

Winter brings a quiet transformation to the vineyard, as our vines enter dormancy—where growth temporarily pauses for a critical period of rest. During this time, the energy stored in the roots and canes is used to prepare the vines for the season ahead. Our team carefully prunes the dormant wood, shaping the vines to balance future growth and fruit production. As temperatures gradually warm in early spring, tiny buds begin to swell – marking the end of dormancy and the start of new life. This delicate transition from rest to growth sets the stage for another season of vibrant shoots, flowering, and ultimately, the promise of another bountiful harvest.

At Sinegal Estate, we’re committed to quality, sustainability, and the betterment of our planet, in every way we can. In the interest of all three of those commitments, we’re proud to be a California Certified Organic Farmer (CCOF), which ensures that our farming methods uphold a strict standard of environmental and agricultural sustainability. On an everyday basis, it means avoiding synthetic chemicals, working to foster biodiversity, and improving the overall health of our soil – leading to happier vines (and more outstanding wines) in the long run.

Q&A
1. Tell us about your role at Sinegal Estate
I serve as the Midwest Wholesale Division Director while also covering On-Premise National Sales. I’m based in Houston, TX, and work with an incredible team of talented individuals.
2. Tell us how long you’ve been here and your fondest memory at Sinegal?
I joined Sinegal Estate in November 2022. My fondest memory so far has been stepping into a new role and leading a team that’s eager to win and collaborate.
3. Everyone has a favorite.
What’s your wine of choice these days?
My go-to favorite is the Sinegal Estate Sauvignon Blanc. It’s a hidden gem in our portfolio and is quickly becoming a Master Somm’s favorite too!
4. Someone is traveling to Houston who has never been.
What’s your locals only secret spot for them to try?
Houston offers no shortage of things to do! However, I strongly recommend avoiding a summer visit and instead planning your trip during spring (February to April) for the best experience.
Stay at Hotel Saint Augustine or La Colombe d’Or Hotel. Start your morning with breakfast at Tiny’s No. 5, stroll through Hermann Park and then end your evening with a nightcap at Bar No. 3 in La Colombe d’Or Hotel.

1. I’m left-handed.
2. I was born and raised along California’s Central Coast.
3. I hold a degree in Business Marketing and Viticulture from Cal Poly SLO.
4. I have a long list of food intolerances, with dairy being the most significant.
5. I have two adorable French bulldogs: Diesel, the oldest, and Krug, the youngest—named after the Champagne house!
6. I grew up riding horses and playing sports—I’m extremely competitive.
7. Fall is my favorite season.
8. I’m the youngest of two and was supposed to be a twin.
